Description

 The main quantitative indicators of continuous hydrolysis of starch by enzymes of gluco-amylase complex at the stage of dissolution and saccharification, necessary for the development of an effective scheme of implementation in industrial conditions, are determined. It was found that at the stage of starch dissolution the carbohydrate composition of the wort is characterized by the content of maltodextrins and maltose in almost the same amount, and the glucose content is much lower. The main amount of sugars is formed during the first hour of the process, which requires adjustment of the technological scheme.
