Studied the kinetics of the processes of structure formation of fat compositions during high-intensity thermomechanical processing have been carried out. Numerical values of energy consumption for processing fat mixtures have been established, which allows obtaining a product of good quality. Empirical formulas have been obtained for calculating the effective viscosity of fat compositions with different proportions of milk fat, which can be used to correct the technological modes structure and develop new equipment. Developed "Recommendations for the production of spreads, on lamellar installations " and "Technological instructions for the production of spreads by the conversion of mixtures of high-fat cream" to DSTU 4445: 2005.
