Sugars, penetrating into cells and creating a high osmotic pressure there, prevent the formation of ice crystals and cell destruction during the freezing process. Protein components are added to the medium to strengthen the connection of the cell membrane with the cytoplasm, which is important for thawing and rehydration of cells. It has been shown that bacteria stored frozen can retain their viability for a long time.
