Object of the research - improved technology of the wheat bread to prolong its storage term as well as increasing of nutritional and biological value of servicemen's diet. Purpose of the research - development of the diet optimization methodology for servicemen by using an innovative product with functional ingredient. Method of the research - analytical, practical. The outcomes of the research are as follows: the existing baking technologies on prolongation of bread storage as well as adjustment of servicemen's diet have been analyzed throughout the literature; an innovative technology of both wheat and wheat-rye bread with functional ingredient has been developed. The research work results are going to be used: in educational process in the National Academy of the National Guard of Ukraine while training classes on: "Military nutrition and baking", "Food supply arrangement", "Food supply economy and management", "Food supply management of the NGU's military units", "Technology and commodity science of food products"; as a part of day-to-day activities of chiefs of food services in military units.
