The object of research is plant varieties and fruits of rare fruit and berry crops.
The purpose of scientific and technical work - to conduct a scientifically sound selection of fruits of rare fruit and berry crops depending on species and varietal diversity and to develop technologies for the production of healthy foods.
Research methods: general scientific - analysis, synthesis for generalization; field - phenological observations - to determine the selection value of samples; special selection - biometric, measuring and weight, structural analysis; physiological and biochemical - determination of drought resistance, photosynthetic potential of new forms of sea buckthorn; biochemical - determination of the content of nutrients in fruits; statistical - variance, variational analysis - to determine the patterns of variability of quantitative characteristics, to establish the reliability of experimental data.
In the process of performing the stage received:
- results of evaluation of primary components (pasteurized natural mono-juices) for the production of blended juices and syrups from fruits of pre-selected species and varieties of rare fruit and berry crops by biochemical (dry matter, sugar, acidity), physicochemical (mass fraction of pulp, sediment) and organoleptic (color, aroma, transparency) indicators;
- results of biochemical analysis of fruits of different species and varieties of rare fruit and berry crops (viburnum, blackberry, blackthorn, dogwood) for the content of micro- and macronutrients, polyphenols, organic acids, fiber, pectin, total sugar, anthocyanins, vitamins;
- methods of processing the fruits of rare fruit and berry crops (viburnum, blackberry, blackthorn, dogwood) for the manufacture of blended juices and syrups (guidelines);
