The purpose of the research is to create scientific and practical foundations for ensuring the effectiveness of temperature and mass exchange processes in food environments and to create appropriate equipment.
Research methods are analytical, theoretical, experimental.
On the example of the brewing industry, the possibilities of using the resources of spent gas flows in the conditions of performing aeration processes of germinating grain massifs, the combination of technological interests of ensuring the drying of green malt with the participation of heat pumps, to avoid thermodynamic deficiencies in the manifestations of unevenness of temperature fields are shown. The possibility of energy influences on the results of preparation of beer jams for their filtration processes is shown.
