The theoretical and methodological basis of the organizational and economic mechanism of the functioning and development of hotel and restaurant business establishments has been developed; a theoretical model of information support for liquidity risk management of hotel and restaurant business enterprises based on financial and managerial accounting is defined; the accounting and analytical support of the personnel component of the organizational and economic mechanism has been improved; directions for optimizing the system of indicators of material flows in the hotel and restaurant business are substantiated; the planning subsystem and the control subsystem in the structure of the organizational and economic management mechanism for the development of hotel and restaurant business enterprises based on a risk-oriented approach to the organization have been improved; methodical approaches to digital transformation and the formation of new innovative business models of restaurant business enterprises have been improved.
