The purpose of the work is a scientific study of the influence of accompanying substances on the shelf life of sunflower oils using a differential scanning calorimeter, which should simplify the determination of the shelf life of sunflower oils of different degrees of purification. Research methods: acid and peroxide values of oil are determined according to DSTU 8839:2019 and DSTU ISO 3960, respectively; determination of the content of phospholipids in oils - according to DSTU 434.2.4; determination of β-carotene in oils - according to DSTU 4305; determination of the oil induction period was carried out at a temperature of +90...+120ºС; a control study of the oxidative stability of crushed flax, sesame and sunflower seeds, as well as their mixtures, was carried out by the accelerated method of "active oxygen" according to DSTU ISO 6886. Experimentally determined induction periods in the temperature range +90...+120 ºС for the samples. Namely: unrefined cold-pressed sunflower oil of the first extraction of the first grade; sunflower oil hydrated frozen pressed first grade; sunflower oil, which has undergone adsorption purification; sunflower oil, winterized and deodorized. Proposed approximation dependences of the period of induction of oxidation of refined, deodorized, frozen sunflower oil samples with a peroxide number of 0.22 mmol ½ O/kg of: acid number values in the range of 1.15...2.50 mg KOH/g; the content of phosphorus-containing substances in the range of 0.50...1.50%. The study of the oxidation of refined sunflower oils with the addition of different carotenoid content was carried out. The oxidation of unrefined, hydrated, and refined sunflower oils with different contents of primary oxidation products was studied.
