Compositions of encapsulated modified starch with vegetable powders have been created for the production of quick-cooking food products that are high-calorie and resistant. Such products are promising for the nutrition of military personnel and people with sensitive digestion. The basic properties for creating an optimized composition of instant puree soups studied and a corresponding mathematical model was developed. Based on the obtained data, a line of pureed soups was proposed, and methodical recommendations were developed and issued.
