The technology of encapsulated starch with keratin- and pectin-containing raw materials has been developed, which allows increase the resistance of the food product in which this starch will be used. Compositions of encapsulated modified starch with vegetable powders have been created for the production of quick-cooking food products that are high-calorie and resistant. Such products are promising for the nutrition of military personnel and people with sensitive digestion. The basic properties for creating an optimized composition of instant puree soups studied and a corresponding mathematical model was developed. Based on the obtained data, a line of pureed soups was proposed, and methodical recommendations were developed and issued. The line of instant puree soups presented as part of the international exhibition "Agro-2021".
