The aim of the work is to investigate the effect of different modes of low-temperature destruction and extraction on the content of some peptide and steroid hormones in extracts from tissues of animal (placenta and cord blood) and plant (nettle leaves) origin, as well as depending on the salt composition and pH of the extraction medium in comparison with disintegration and extraction in the temperature range of 70–100 ºС and after osmotic lysis. The following biochemical methods were used in the work: centrifugation, ultrafiltration, spectrophotometric, chromatographic, electrochemical and immunoenzymatic analysis. It was found that the use of "slow freezing-slow warming", 150 mM KCl and solutions with pH 5.0 are more effective. It has been shown that the use of freezing and subsequent thawing for destruction and extraction provides a higher yield of water-soluble biologically active substances (hormones, vitamins, protein substances) from the placenta tissue of cows and human cord blood compared to the use of heating to 70 ºС and hypotonic lysis. It has also been established that cryoextracts of nettle leaves are not inferior or have higher antioxidant activity compared to extracts obtained using a boiling water bath.
