The development involves ensuring the predicted nutrient composition, rheological and organoleptic properties of the products. The subjects of the research are innovative solutions in the processing of organic raw materials using a low-temperature resistive electric heater of the radiant type, which ensures resource saving and preservation of nutritional value. Tests are carried out on raw materials with high nutrient potential of natural origin. Special attention is paid to the development of devices for gentle thermal operations, which minimizes the loss of raw materials. The resulting semi-finished products can be used in the rations of the military, doctors and the population in extreme conditions, as well as to reduce synthetic components in the composition of finished products. The results of the work are aimed at increasing the competitiveness of the Ukrainian agro-industrial complex, ensuring food security, and creating high-quality, functional products for the domestic market and export, in accordance with the concept of sustainable development and the European strategy "From Farm to Fork".
