Subjects: domestic manufactured bakery goods - bread from rye and mixture rye and wheat flour, products bakery rich produced by public corporation "Одесский каравай". Object: to determine hygienic and sanitary-epidemiologic safety of the test subjects (TS) to release their using according to intended purpose (foodstuffs). Methods: organoleptic, sanitary-chemical, microbiological. Results: was determined that TS conform to the current sanitary-hygienic requirements so it is possible to accept them as safe and recommend to apply as foodstuffs.
