Developed new technology: marmalade jelly based builders of various origins with juice concentrates rich in vitamin C; technology marshmallow gelatine-based substances with solubilised using natural dyes anthocуanins ; technology jelly and sweet dishes based on fruit juices using builders of different origin. The developed technologies will significantly expand the range of modern jelly products. Tested new methods for determining the content of vitamin C in the jelly products using titrimetric , photocolorimetric and coulometric analysis methods.
