Innovative approaches to the formation of the assortment of confectionery enriched with ascorbic acid (vitamin C), Iodine, dietary fibers are reviewed and the prospects of adapting methodologies of the chemical analysis of their determination in confectionery products is based. The methodologies for determination of vitamin C in the composition of jelly products on the basis of amendments of different origin by means of galvanostatic coulometry method, high performance liquid chromatography are adapted. The methodology for determination of total Iodine content with the help of galvanostatic coulometry is adapted and recommended as a statistically valid express method for solving the problems related to the quantitative determination of this element in food additives from the dried seaweed. The methodology of the quantitative determination of flavoring agents for herbal additives obtained with the use of cryogenic technologies - cryogenic powders from Sudanese rose and black chokeberry is adapted.
