The aim of the research is to develop the technology of freezing and low-temperature storage of home-grown plum fruits on the basis of selection of optimal parameters of fruit freezing and assessment of suitability of different varieties for freezing and low-temperature storage. Research methods: laboratory, chemical, organoleptic, statistical, economic and calculation. According to the results of the conducted researches the technology of freezing and low-temperature storage of fruits of house plum is developed. Optimal parameters: freezing temperature - minus 24 ± 1 ° С, low-temperature storage - minus 18 ± 1 ° С.
