As an innovation in the production of natural plant additives used cryogenic or parothermal treatment, as well as fine grinding in modern devices, which are in the restaurant business, the use of which is accompanied by processes of non-enzymatic catalysis and mechanochemistry. As an innovation in the production of a new generation of health products used natural plant additives obtained by nanotechnology in the form of nanopowders and pastes of raw fruits and vegetables, which are five in one: a source of BAS and proteins, dyes, structurants, gels, flavors. The use of such additives made it possible to exclude traditional food additives from product recipes. 2 monographs, 15 articles were published on the topic (4 of them in Scopus (3) and Web of Science (1), 6 in professional publications of Ukraine, 111 abstracts. 6 gold medals were won at International Culinary Competitions in Europe and Ukraine.
