У другому розділі представлено об’єкти, предмети та методи дослідження. Надано схему проведення дослідження. У третьому розроблено проєкт технології желейно-фруктового мармеладу з використанням цукрозамінників, а саме ізомальту та сиропу мальтитолу з повним виключенням цукру-піску та патоки з рецептури продукту-аналогу. Визначено зміни параметрів виробництва та показники якості, розроблено елементи харчової безпечності в технології виробництва. При розрахунку енергетичної цінності та глікемічного навантаження запропонованого продукту відзначено зниження на 20 та 34 % відповідно у порівнянні з продуктом- аналогом. In the first chapter, the current state of the sugar confectionery market, the production features of jelly-fruit marmalade, technological features and innovations in the technology of marmalade with sugar substitutes are investigated. The second chapter presents objects, subjects and research methods. The research scheme is provided. In the third, a project of jelly-fruit marmalade technology was developed using sugar substitutes, namely isomalt and maltitol syrup, with the complete exclusion of granulated sugar and molasses from the recipe of the analog product. Changes in production parameters and quality indicators were determined, elements of food safety in production technology were developed. When calculating the energy value and glycemic load of the proposed product, a decrease of 20 and 34% was noted, respectively, in comparison with the analogue product.
