Сontent of mycotoxin patulin in the samples of vegetable raw materials, common in eastern Ukraine was experimentally determined. Storage trend growth patulin content in vegetables was revealed. Roots, namely beet, accumulate more patulin. The content of patulin in four economically botanical varieties of red beet roots in a different type of damage was determined.
