The major result of the work is the reception of technological processes of food products manufacture in the kind of concentrated liquid products based on concentration and drying with the use of vacuum microwave technologies, film flow, bar membrane methods (ultrafiltration); drying at infrared heating with a reflector system, in pseudo-liquefied layer with the use of oscillation. The obtained production differs from the analogues by a high level of maintenance of nutritive and biological value of raw material and will further be used in catering business, baking, alcohol-free brewing, confectionary, and milk industries. The introduction of new processes and apparatuses provides the reduction of production cost of ready products manufacture due to reduction of energetic resources during the concentration and drying of raw food to 20%, high quality of ready products.
