Ways of peanuts uses in the recreational purposes production, including the range and methods of production of peanut butter, oils, snack products in the health food was analysed. On the basis of the marketing research and a commodity heuristic expertise, we have identified the most important consumer properties of new peanut products. We have carried out complex research on organoleptic, physical, chemical and microbiological characteristics, indicators of nutritional and biological value as well as safety of new products. We have traced the changes in quality indicators of the developed products during storage and set guaranteed terms of storage.
