Technological solutions for the method of cooling beer walnuts by products of hop processing are offered, depending on the quantitative content and qualitative composition of alpha acids, their isomers, polyphenols, xanthohumol and other biologically active compounds. The scientific and practical recommendations on the method of whisker hopping have been developed and published. Economic efficiency at implementation of the method makes 300-400 thousand UAH. for 1.0 million gave beer, which is achieved at the expense of reducing the cost of the drink in terms of the cost of hops when taking into account its varietal and biochemical properties. This will allow you to enrich the drinks with the energy-stimulating and immune-supporting components of the hops. The proposed technological solutions to the efficient use of a complex of technologically valuable compounds of hops and products of its processing in bakery. The norms are optimized and the calculation of hop consumption costs in baking is proposed, taking into account the content of bitter alpha acids in it. Scientific and practical recommendations have been developed and published. Social efficiency is achieved by improving the consumer properties and bread flavors, extending the shelf life and expanding the range of baked goods.Together with the scientists of the "Institute of Microbiology and Immunology" І.І.
