Objects of study are the glued intestinal casings made from pork belly, tannin, glycerol, fried sausage Ukrayinska of top grade. Objective is the scientific background and improvement of the technology of glued guts casings. Research methods are traditional and special physical and chemical, planning methods and mathematical processing of the experimental data methods. Scientifically based of improvement of the technology of glued guts casings using with tannin (vegetables tannin substance) with the aim of increase the protective and physical and mechanical properties. Studied changes of structural and mechanical properties of glued guts casings in technology and storage of fried sausages, their impact on quantity and quality of finished products. The topic of this research was the base for course projects and Masters degree projects. The results were published in approved scientific special editions of Ukraine, were discussed at scientific and practical conferences, were implemented in the production and educational process, the patents of Ukraine for useful model were approved.
