Traceability is one of the basic concepts of HACCP food safety systems, the introduction of which is mandatory under current legislation of Ukraine. Traceability is an effective means of consumer protection that, in the event of a food incident, allows the supplier to identify where the hazardous raw material or food product was sent and where the source of the threat came from, ie to trace the entire route of the hazardous raw material or product. Therefore, the basis of a successful traceability system is the effective identification and identification of batches of products, as well as proper documentation of the traceability system.
The main three components of the traceability system are traceability of the supplier, traceability of technological processes (actually internal traceability) and traceability of the customer.
