Milk raw materials were monitored and a database of fatty acid and triglyceride composition of milk fat was compiled depending on seasonality, and their limits were established as identification indicators for establishing criteria for the naturalness of the fatty phase of milk raw materials. Monitoring of the quality of milk fat substitutes (Milk fat substitutes) of domestic producers for various types of dairy products was carried out according to the fatty acid and triglyceride composition. Methodological recommendations have been developed for the quantitative control of non-dairy fats in the fat phase of milk and dairy products to detect their falsification.
