popup.description1
The aim of the project is to create and develop highly efficient multi-component ultrasonic oscillating systems for the food industry, catering and individual use, including mobile, energy-saving ultrasonic complex to intensify the grinding of raw meat in the manufacture of functional meat products for combatants. to detoxify their body, prevent them from diseases of the cardiovascular system, joints, bones, as well as increase their energy levels and stimulate their muscle development
popup.description2
This project is dedicated to the development of ultrasonic equipment and technology for the production of fundamentally new meat products with a functional purpose, which will be aimed at solving the physiological needs of a person in the conditions of hostilities. The project was implemented taking into account the directions of critical technologies approved by the Cabinet of Ministers of Ukraine order of August 30, 2017 No. 600, it provides for the applied results of dual use and competitiveness on the world market. The goal of the project is the creation and development of highly effective multi-component ultrasonic oscillating systems, in particular a mobile, energy-saving complex for intensifying the process of grinding raw meat in the production of functional meat products for combatants, which are aimed at detoxifying their bodies, preventing them from cardiovascular diseases vascular system, joints, as well as increasing their energy level and stimulating their muscle development. Modeling of physical processes in piezoelectric elements using the finite element method was carried out to find optimal characteristics of ultrasonic components and their verification by experimental methods. New methods of grinding raw meat using complex spatial oscillations of the cutting tool are theoretically and experimentally substantiated. The effectiveness of grinding collagen-containing meat raw materials was investigated by means of atomic force microscopy, and the piezoelectric components of ultrasonic oscillating systems were developed. Theoretical provisions of connection and coordination of oscillating systems (components) of different physical nature have been created.
