Object of research food biopolymers, which are dissolved in water is fibers and polysaccharides of sea seaweed.The purpose is investigating of solubilization by these biopolymers and vegetable oils, using photometric and refractometric methods. The superficial properties of solutions during their contact to oils studied by Du Nue methods . Is proved, that solutions of fibers solubilizеd sunflower oil. The condition of realization the solubilization is investigated. The results of research are introduced into educational process.
