The role of hydrobionts of different trophic levels (invertebrates, fishes) in water quality formation in regulated systems is shown and relations between productional, physiological, biochemical characteristics of hydrobionts and qualitative water composition are determined. Under cultivation process the sensitive hydrobionts strains to pollutants are found out. Biotesting of natural and waste waters was done. It was found that cytogenetic analysis, namely nucleoli test, is effective and prospective methods for assessing of water biological properties. The essential condition of successive hydrobionts cultivation is determining optimal parameters for growth and development in regulated systems, that requests specific methods of water preparation (dechlorination, thermal treating, aeration, pH correction). The main factors of water environment which may regulate nitrogen transformation process in regulated systems and determine culture productive characteristics (food load, according microorganisms groups functioning, dissolved oxygen level, population density, initial density of food organisms) are defined. The water quality changes such as hydroxyl ions concentration increasing while invertebrate culturing are accompanied organisms buffer system alteration. Life conditions deterioration influence organisms energy cover (macroenergy phosphorous compounds concentration) which lied to decreasing of generative processes intensity, declining of productivity and reduction of nutritive value of invertebrates biomass (amount of proteins and lipids). It is developed the segregation methods of biological valuable substance - chitin - from hydrobionts of different trophic levels. The most amount of chitin obtained from artemia eggs (53.4 %), carapaces of decapoda (24.0-25.6 %), biomass of moina and daphnia (5.6-8.7 %).
