The purpose of work - research of a negative catalysis by phenols of processes of an oxidation of organic compounds and development of new AO. Methods of research - chemiluminescence, gasovolumometry, IR-spectroscopy, fluid chromatography, photocolorimetry, polarography. Results - the chemical reactivity of natural phenols and their mixtures, contained in plant extracts, in reaction with radicals of a different nature is researched. It is established, that the reactivity of phenols in these reactions at absence of steric effects is defined by thermodynamic and polar factors. The high activity of ortho-polyphenols are explained by low value of bonds hardness of reaction centres and energies of highest occupied molecular orbital of molecules. The dependencies between kinetic parameters of antiradical activity of the investigated plant phenolsand their electron structure in form of two-parameter correlation equation, which allow predicting the antioxidant properties for series of unshielded phenols, are established. The contents and the chemical nature of these polyphenolic compounds in biologically active material of plants define the antioxidative property of extracts, obtained from them. The optimal conditions of extraction of phenolic compounds from plant raw material are determined. The possibility of usage of natural phenols and extracts for inhibition of processes of an oxidation different on complexity systems is shown. The mechanism synergyl of operation of acetylacetonates of metals in mixtures with phenolic AO is improved. The acetylacetonates of zincum, barium, nickel overwhelming a degenerated branching of chains of oxidation, strengthen of property of phenols in composition of epoxy oligomers and network polymers.
