Qualitative and quantitative analysis of extracts and waste of extraction were carry out by the methods of gas and liquid chromatography. The results of researches permitted to choose the extract of amaranth and its waste after extraction for creation of functional products. Medical - biological researches of the carbon dioxide extract of amaranth and meal from its waste after extraction, were carry out too. Confationery were chosen as functional products, technology of their production is modified. The computer program of calculation of functional products compounding, projects of technical terms on the carbon dioxide extract of amaranth and meal from its waste after extraction, compounding of confationery, technological instructions on their production is developed.
