Conducted research of the frozen fruit fillings from fruit raw material was rotined, that in the process of storage there are insignificant changes of physical and chemical indexes of quality of the fruit fillings, the microbiological indexes of safety answer microbiological norms, to set for this group of products in Ukraine. From the got results (determination of the state of moisture) evidently, that pectin, utillized as загустителя increases the amount of bound-water in the fruit fillings, that is instrumental in the increase of maintainance of the fruit fillings in the frozen state.
