Technologies to produce wine materials from the study grape varieties taking account of the advantages of each valuable autochthonous and introduced wine variety and clone released by the National Institute for Vine and Wine "Magarach". Development of blending technologies to produce wines based on the results of the investigation of the chemical and sensory characteristics of the study grape varieties. A total of 200 variants were studied during the investigation of valuable wine varieties and clones released by the Institute "Magarach" and other research organisms for agrobiological, economical and technological traits. Technologies to produce still variety and blended wines both in dry and fortified versions, sparkling materials and brandy materials from a number of new varieties released by the Institute "Magarach" ('Riesling Magaracha', 'Tsitronnyi Magaracha', 'Aurora', 'Kafa', etc.) were fine-tuned. The possibility was established to produce quality sparkling and still wines from a number of French white (Riesling of Rhine - 9, Chardonnay - 7, Kokur - 2) and red (Gamay - 2, Pinot noir - 4, Cabernet Sauvignon - 9, Merlot - 8, Cabernet Franc - 5) elite clones; from a number of autochthonous white 'Solnechnodolinskiy', 'Solnechnaia Dolina-60', 'Tashly') and red ('Krona', etc.) grape varieties. Blended wines combining the advantages of each component were produced taking account of the results of sensory studies and the data of the physico-chemical composition: 'Riesling Magaracha' + 'Tsitronnyi' (1:1), 'Aurora' + 'Tsitronnyi' (1:1), 'Antaeus' + 'Ai-Petri' (1:1), etc. Technological instructions for the best products obtained were developed. New varieties released by the National Institute for Vine and Wine "Magarach" were registered in the list of grape varieties authorized for the production of vintage products according to State Standard of Ukraine "Fresh grapes to be made into wine.
