To de-velop a methodology of object-oriented techno-chemical control of wine-making. Research methods: analysis of the chemical composition of experimental and control wine materials by the use of certified methods, experiments aimed to evaluate yeast autolysates, new strains of sherry yeast, technological equipment, technological methods. The study of the peculiarities of yeast autolysate accelerated production with the aid of fundamentally new energy-saving technological equipment enables the quality of vintage products to be improved. The use of new strains of cold resistant sherry yeast in sherry production improves their typicalness and quality, combined with reduced energy consumption. The effects of proteolytic enzymes at different stages of the process of obtaining yeast autolysates were studied. The influence of yeast autolysates on the chemical composition and the processes of formation of wine materials was established. An energy-saving technology and an installation for the accelerated preparation of high-quality yeast autolysates were developed. A technology of sherry production based on the use of new strains of cold re-sistant sherry yeast was developed. A methodology of object-oriented techno-chemical control in the production of vintage products was developed. The results of the research done are ready for commercial introduction at industries of the wine industry of Ukraine.
