Four yeast strains effective for the use in wine-making and two strains of malo-lactic bacteria were selected, and the patents for them were obtained. A methodology for the genetic identification of several groups of micro-organisms for wine-making was affirmed and tested ("A methodology to determine the specific assignment of yeast strains of the genus SACCHAROMYCES by the polymerase-chain reaction (PCR) method and Restriction Fragment Length Polymorphism (RFLP)", "A methodology for the genetic identification of cells of malo-lactic bacteria", " A methodology to determine the specific assignment of yeast strains of the genus BRETTANOMYCES by the polymerase-chain reaction (PCR) method"). A total of 20 yeast cultures maintained in the National Collection of Micro-organisms to be Used in Wine-Making were re-identified, and four strains of industrially valuable organisms were marked. Methodological recommendations as to the object-oriented microbiological control of production were developed.
