The use of activated carbon from grape seeds during processing of grape must and wine materials was evaluated from a technological standpoint. The results of the studies were subject to mathematical processing. Regression equations describing the changes in the quality indices of wine materials were generated, and their correlations with different factors were established. The modes and the parameters of technology of obtaining activated carbon from grape seeds were developed. Draft recommendations as to the obtaining and use of activated carbon from grape seeds were elaborated. The results arising from the study of activated carbon from grape seeds were used in developing the Draft Standard of Ukraine "Activated Carbon for the Wine Industry".
