The purpose of research - elaboration of technology of maize grain quality' improvement with the utilization of biochemical effect of the mutant genes of endosperm structure, creation the collection of endospermic mutants and recombinants and its practical application in the breeding of high- quality inbreds and hybrids of fodder, food and technical purposes. The methods of research - genetical, biochemical, technological and statistical analyses. The effect of the maize mutant genes of endosperm structure o2, sh1, sh2, su1, su2, se, wx and ae for the general grain quality traits, the expressivity of endospermic mutations during seed ripening and the effects of non - allelic interactions between the genes of endosperm structure were established. It have been identified the mutant inbreds with the protein content in the grain up to 16%, the content of lysine in the protein up to 4,8%, oil content in the grain up to 14%, the content of oleic acid glycerides in the oil up to 42%, amylopectine in the starch content up to 99,4%, amylose in the starch content up to 65,3%, the content of saccharides in the grain of technical maturity up to 8% and water- soluble polysaccharides content up to 6%. The best inbreds were turned over to National Centre of Plant Genetic Resources of Ukraine. Created waxy, sweet and super - sweet hybrids were entered in the State Variety List of Ukraine and the new hybrids of high - lysine, high - amylose and super - sweet maize were passed to the Ukrainian State Variety Testing. 10 patents for the methods of creation and industrial utilization of the hybrids on the basis of endospermic mutations were received.
