The object of investigations: fresh vegetable, which are grown, stored up and realized for children's nourishment. The aim of the working of the standard is the improvement of production quality, lowering of it's. losses, growth of the effectiveness of technological production. The standard reflects the most optimum way of getting vegetable production, which meets the demands of existing standards for fresh vegetables. In the basis of the standard for fresh vegetables technology for children's nourishment are put the result of long-term researches on the technology of vegetable plants growing, which have been carried out at the Institute of Vegetable and Meloning of UAAS and other scientific establishments with the use of reference material (collections, reference books, recommendations, etc.) and materials of native and world literature. The qualitative indices, which have been established in the national standard, will promote to getting of highly qualitative vegetable production for children's nourishment. The standard, which has been worked out, is interconnected with existing normative documents: SSU 2175-93 "Vegetables. Terms and Definitions"; with the standards for fresh vegetables, which are aimed for the realization fresh and industrial processing, and also with normative documents, in which the demands as to the safety of work and life and health of people, environmental protection and so on are set forth. The novelty of investigation: In the developed standard all the technological operations are given in that succession, that must be kept to in the process of vegetable growing for children's nourishment, method of control and estimation of work quality, as well as demands on safety and environmental protection. The standard, after coming into force, will be applied in Ukrainian farmings with different forms of privaty, which are engaged in producing, storing and realization of fresh vegetable production for children's nourishment.
