Purpose – establish requirements for quality and consistency of technological operations in the mushroom oyster mushroom cultivating plants, to ensure product quality and compliance with existing standards for fresh mushrooms, reduced production losses, increased efficiency of production technology. This can be achieved through careful preparation of cultivating the premises, using the optimum composition of the substrate, the maintenance regime of climate, etc., which correspond to the state of the art. The report outlined the main provisions of national standards with technology growing mushrooms oyster areas of artificial conditions. The basis of a draft standard developed by the responsible best practices and advances in science, the recommendations of the Institute of Vegetable and Melon-Growing and other scientific institutions. Qualities indicators are installed in a standard crop facilitate obtaining high-quality oyster mushrooms; reduce product losses, increased efficiency of production technology of mushrooms. The novelty of the research developed standard for the technology of growing oyster mushrooms is that it is aligned with international standards, as well as with the current requirements of consumers and the state system of standardization. Standard, after providing him the strength to be applied in the farms of Ukraine of different forms of ownership engaged in the production and sale of oyster mushrooms.
