The purpose - to study quality of berries, determine influence of freezing and pre-treating on the anatomical structure of plant tissues of cultivated and wild species of berries, common in Ukraine. Experimentally found that the most efficient is to remove water about 10% or 15% of its original content in berry. Also scientifically proved the efficiency of processing berries in 0,5% solution of polysaccharide (sodium carboxymethyl cellulose), which increases resistance to deformation after freezing. Proved that the simultaneous use of these types of pre-processing applied to maximize the preservation of the original properties of the cultivated and wild berries during freezing. Cryoscopic studies have shown that the crystallization temperature of frozen water in the samples of berries changes in direct proportion to the temperature of freezing. Experimentally identified the start and end of the crystallization-melting frozen water, and calculated its actual amount in the samples. It was determined the effect of freezing on indicators of the commercial quality of the product - the microstructure of plant tissue of berries. It is noted that during freezing berries, which were preliminarily dried, formed fewer ice crystals, that in turn, leads to a slight destruction of the structure of plant tissues.The use of pre-processing berries by the solution polysaccharide also shown, that the plant cells become less sensitive to the ravages of ice crystals.
