The subject of the research is merchandising assessment of buckwheat and millet quality. The study of merchandising descriptions and quality assessment of buckwheat, buckwheat millet and millet of different selective varieties are common in Ukraine is the purpose of the research. The chemical composition, food and biological value of buckwheat and millet are considered, breeding efforts of improving traditional and selection of new varieties of buckwheat and millet are analyzed in the analytical review of the literature. Toxic agents which pollute cereals are characterized; the use of buckwheat and millet in the production of functional purpose products is considered. The quality assessment of buckwheat, buckwheat millet and millet of different selective varieties is analyzed on organoleptic and physical and chemical parameters. General chemical composition of cereals is investigated, vitamin and mineral composition is determined. The amino acid composition of protein and fatty acid composition of buckwheat and millet fat are determined and analyzed. The content of toxic agents (heavy metals, oxalates, nitrates) in buckwheat and millet depending on the variety of cereals is identified. Recommendations for the selection of the most valuable and balanced on their chemical composition, ecological, with minimum of accumulation toxic substances varieties of buckwheat and millet for their use in the production of functional purpose are elaborated. The results of the study are 5 research papers.
