On laboratory model of a scrapers pasteurizer heat exchange processes were investigated at heating and cooling. The generalised mathematical dependences of intensity heat transfer and expenses of mechanical energy in the lamellar scraper heat exchanger are received. The developed design procedure for designing of the equipment of thermal processing mixes in manufacture the spreads.
