The purpose of the work - the establishment of relationship between the chemical composition of fats and term storage based on experimental studies of the kinetics of oxidation of the most common types of fats, changes of oxidation values and their impact on physical, chemical and organoleptic properties of fats.. - research of quantitative composition of oxidation products formed in fats under the influence of the above factors; - establishment of qualitative and quantitative factors influencing the change in organoleptic properties of fats; - the need to formulate general criteria of assessment of fat oxidation; - the need to introduce and use of a unified system of oxidation indicators units. The method of oil cleaning from natural oxidation inhibitors was developed, the influence of fatty acid composition of oils with varying degrees of unsaturation on the value of the induction period of oxidation in oils deprived of natural inhibitors, was investigated. The influence of oil oxidation products arising during the period of induction on the organoleptic characteristics of these oils was defined. It was established that in addition to quality parameters that characterize the degree of oxidation fats such as Peroxide Value, Anisidine Value, epoxy compounds are important which are defined in the index as Epoxide Value.
