The purpose of the study is to increase operational stability of thin-walled knives for confectionery through the development of new methods and technologies of knives strengthening via coatings. Different modern methods of analysis are used in our research to study the structure and properties of the strengthening coatings. Complex approach which includes metallographic, electron-probe and X-ray structural analysis is used for structure analysis. Comparative researches obtained during macro-, micro- and nanohardness measuring with an estimate of these values for both coatings and initial material are used for mechanical properties estimates. Values of the cutting tool wear resistance are obtained in the laboratory (close to real) and industrial conditions. Temperature field in the different zones of knives during operation was calculated both theoretically and experimentally using the proposed methodologies. The new complex methodology of optical-mathematical processing of the microstructural images of the cutting tools are carried out for the description of structure formation processes in the initial, strengthened and worn out knives. Technique for determining the thickness of the strengthening coating when applied and changed during the operation is proposed. Scientific novelty consists in the evaluation of the effect of coating on the self-sharpening propensity, damage, development of stresses and strains of the thin-walled knives. Impact of structural heterogeneity which forms during the coatings applying is theoretically evaluated: this allows one to adjust the technological parameters of the process.
