The aim - to establish the impact of increase in body weight and age slaughter bulls for meat productivity. Research methods - to solve the tasks used zootechnical methods (determination of body weight, meat productivity), technological (pH study, water holding capacity and penetration longest back muscle), physicochemical (setting composition beef), organoleptic (tasting ), economic (calculating the cost of growth, sales revenue, profits and profitability of beef), statistics (calculation of averages and their errors, correlation coefficients). Received further development approval, to reduce beef production for one day life extension bull by the age of slaughter. It was established that the increase of live weight of bulls before slaughter leads to a reduction slaughter with drawal. Proved reducing net increase in precocious meat breed bulls for the increase of live weight before slaughter, and in late mature - its growth. Established that increasing age slaughtered young cattle helps thickening fat, increase marmurovosti beef, increase communication among its marbling and calories. Proved that the average daily gain of bulls has a greater impact on growth slaughter output, net growth, higher content of muscle tissue and first grades and reducing the proportion of bone, fat and intramuscular fat, rather than their age and live weight before slaughter.
