Subject of research - theoretical basis, practice and prospects of development of restaurant and hotel technologies. The purpose of research - to provide a detailed and structured analysis of the current state and the main world trends in the development of restaurant and hotel technologies and to justify the possibility of using foreign experience for the development of this segment of the tourism industry in Ukraine. In the course of the research, certain tasks were performed to achieve the stated goal: analyzed scientific approaches to the definition of the essence of the latest restaurant and hotel technologies; expert-statistical estimation of modern restaurant and hotel technologies; analyzed the role of hotel and restaurant services in the leading tourist countries of the world; the foreign experience of organization of the newest restaurant and hotel technologies in the countries - leaders of the world tourist market is analyzed. The practical value of the study is that the obtained results allow: to form optimal models of development of the newest restaurant and hotel technologies on the basis of leading foreign experience; to determine the mechanism of optimal use of the tourist potential of the state for the development of hotel and restaurant economy; to determine the priority directions of development of hotel and restaurant economy in the state; outline directions for improving the management of innovation processes in the country's tourism sector. The obtained results can be used to improve the documents (regulations, methodologies, instructions) regarding the development of the tourism industry and its infrastructure in today's global globalization conditions.
