Research methods - general scientific methods (method of hypothesis, analysis, synthesis, analogy); industrial (experimental storage and processing); Laboratory (analytical studies (high performance liquid chromatography, capillary gas chromatography, spectrophotometry, conductometry, fotokalorymetriya)). According to the research by the research work report theoretically and experimentally proved the effectiveness of recycling Shishkov aromatic and bitter hops varieties pellets type 90, type 45, carbon dioxide and ethanol extracts. Established that in the preparation of hop pellets type 90 in modern granulation line loss of specific target components (general resins, general soft a-acids, polyphenolic compounds) do not exceed 5% - and -resin, (relative). However, these benefits are offset by losses in storage and use in brewing. Conducted technological evaluation of breeding varieties of hops and hmeleproduktiv held with the period 2012-2015 years, showed that all are in the tonkoaromatychni and aromatic hop varieties Slavyanka, National, Zagrava and pellets type 90, made them suitable for use in self brewing, and for improving the taste of beer in conjunction with other products processing. Self granules using hops and bitter type Alta can not get bitter beer of excellent quality. Carbon dioxide and ethanol extracts for independent use in brewing are not suitable. You can recommend their use in combination with aromatic varieties, while respecting the specific technology. The changes of quality indicators hop pellets produced in Ukraine, according to the terms and conditions of storage. Loss of bitter substances, polyphenolic substances, essential oils in hops pellets aromatic and bitter varieties during storage depends on the biological characteristics of the variety, conditions and duration of storage. Found that the best preservation of the complex of bitter substances, polyphenolic compounds and essential oils in hops pellets type 90 aromatic and bitter varieties provides storage of vacuum packed and CO2 environment at t 0 ... + 2 oC. More resistant to oxidation, in our study, were bitter varieties Promin granules, pellets hop varieties Slavyanka suffered big losses during storage. Given prevahu and disadvantages of hops and processed products for rational use in brewing is necessary to produce different types of hop preparations to implement and consume a particular drug or combination thereof, depending on the market situation and customer requirements.
