The subject of the study is the kinetics and technology of conversion of triacylglycerols of oils of the linolenic group to surface-active unsaturated oxygen-, nitrogen-containing fatty acid derivatives and surface-active properties of the products obtained. The purpose of the work is the development and scientific substantiation of new approaches to the processes of synthesis of oxygen-, nitrogen-containing fatty acid derivatives based on linolenic group oils that will exhibit dispersant, inhibitory, foaming, washing, cleaning and other properties with the prospect of using them in food, cosmetic, oil and gas products and other industries. Methods of research fatty acid composition and component composition of the starting materials and products of the synthesis is established using the gas-liquid chromatography methods on a chromatograph "Shimadzu" GC-14B (Japan), thin-layer chromatography, titrometric methods, infrared spectroscopy; kinetic calculations are carried out by a differential analysis method; thermodynamic characteristics are determined by kinetic parameters; the adsorption capacity of the reaction products was investigated by the electrochemical method of polarization resistance; emulsifying effect is evaluated by standard methods. Experiment planning, processing of experimental data, mathematical modeling was carried out using software packages Microsoft Excel, Mathcad. The kinetic and thermodynamic parameters of the reaction of direct amidation of soybean oil with formation of oxygen-, nitrogen-containing substances are determined. Rational parameters for obtaining oxygen-, nitrogen-containing surface-active substances have been established. A mathematical model of the kinetics of the process of direct lipid amidation is developed using the Microsoft Excel, Mathcad software packages. Samples of polyunsaturated surfactants were obtained. A technological scheme for amidation of soybean oil with diethylenetriamine is proposed and recommendations are given for direct amidation of oils of the linolenic group.
