The subject of research is the process of mass transfer during extraction in modes close to the boiling point of the solvent. The purpose of the work is the development of highly efficient technological processes for the processing of oilseeds during extraction in modes close to phase transitions of the solvent. The results of the study of the kinetic patterns of oil extraction became the basis for the development of a mathematical model of the process of oil extraction in industrial conditions. The effect of temperature on the rate of extraction of oil from materials with different degrees of destruction of their structure was investigated. Obtained regression equations describing the yield of oil depending on the temperature and duration of extraction. A theoretical study of the extraction mode was carried out on the basis of solving the problem of heat transfer between a granule with an external solvent flow and the diffusion equations of the solvent in the pores of the granule. The optimal technological modes of intensification of the extraction process in industrial conditions are established.
