The subject of the research is the content of anthocyanins and melanins in the husks of sunflower seeds, the parameters of the process of extracting dyes from the husks of sunflower seeds, the quality indicators of melanins from the husks of sunflower seeds. The purpose of the work is to research and scientifically-practical substantiation of obtaining natural dyes from the secondary products of the oil and fat industry - husks of sunflower seeds and other alternative types of natural raw materials. Research methods. The physico-chemical properties of the husks of sunflower seeds, anthocyanins, melanins, the parameters of the process of extracting dyes from the husks of sunflower seeds were investigated by standard methods. The pretreatment of sunflower husk consisted of washing with whole husk with water and drying it at a temperature of 100-105 ° C to a friable state, followed by grinding. Melanin from sunflower husk was obtained by extraction with 0.5 M sodium hydroxide solution at a temperature of 20-22 ° C, followed by filtration to remove the husk. Then to the extract was added with stirring a 25 % solution of hydrochloric acid to bring the pH to 1.5 and kept for several hours. Formed a flocculent sediment of melanin. It was separated by filtration and dried in a drying cabinet at a temperature of 40-45 ° C. Mathematical methods using the software package Statistica, Mathcad, Matlab and Misrosoft Excel are used for experiment planning and data processing. The parameters for improving the method for isolating allomelanins, which consist in reprecipitation of the obtained precipitate, separation of the flocculent sediment of melanin from the liquid phase using centrifugation, washing the resulting pigment with ethyl alcohol, and that the allomelanin was left as a wet mass, or dried in a vacuum desiccator in the presence of draining agents.
