Subject of research - the rate of oxidation of model substances, physical and chemical indicators of model oil, characterizing the degree of oxidative damage. The purpose of the work is the development and experimental confirmation of the effectiveness of new antioxidant systems of biological origin in order to extend the shelf life of fats. Methods of research - physical and chemical parameters of model oil are determined according to standard methods; the periods of induction and the shelf life of the model oil are determined by changing the peroxide number; the rate of oxidation of the model substances is determined using a volumetric unit; planning of experimental research and processing of the obtained results is executed using software packages Missrosoft Excel, MathCad and Statistica. The rational conditions for obtaining substances with antioxidant properties from different types of plant raw materials were determined, antioxidant activity of plant antioxidants was investigated, the most effective systems of antioxidants were developed and their influence on the shelf life of the experimental oil was determined.
